I don't know if any of you watch The Celebrity Apprentice, but Jon and I LOVE it. We loved The Apprentice even more, but we make do with this as well. Anyway, Sunday this last episode, the celebrities had to make cupcakes from scratch and try to raise as much money as possible for a charity. Needless to say I was totally inspired and thought... if Clint Black can make cupcakes from scratch, I can! So, last night, I DID! I even made butter cream frosting. I couldn't believe how incredibly delicious they turned out! I don't think I will ever make cake/cupcakes from a box again, now I say I don't think, because it is faster to make from a box mix... but there is no comparison, the batter and frosting made from scratch was delectable. WOW. So, here are some pictures. I got the recipe from http://www.allrecipes.com/ my number one favorite website now. I can't believe I didn't discover this site earlier. I LOVE it. The reviews help out so much.
White Cake/Cupcakes
Ingredients:
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking
powder
1/2 cup milk
Directions:
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
2.In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
3.Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

I found a recipe on allrecipes.com for butter cream frosting.
1/2 cup butter
2 cups confectioners sugar
1 tsp vanilla extract(I used almond extract... yuuuum)
2 tbs milk
this worked out so well.

Anyhoo, I love homemade cupcakes--definitely the best! However, a baker friend of mine said that if you have a mix and just want to improve on it, use buttermilk instead of milk or water. The buttermilk reacts with the ingredients in the box mix and will make the cake more moist and with a lighter crumb. Of course, you'll have to hide the buttermilk from Jon...
Yes... I have tried to marinate chicken THREE times with buttermilk, and Jon has drank it all before I get the chance to use it.
