Ok. This is the first time that I've actually BLOGGED. I usually just post pictures of Jacob and comment on how cute he is and how fast he is growing. But today, I'm a NEW woman and I'm going to put in a little post about MY life. It shouldn't be that hard to write about yourself right? I do admit though... it is way easier to blog about Jacob than about myself. Here goes...
I started my first subbing job on Monday! I was so excited and it turned out great. I've come to learn that high school is like night and day compared to elementary school. WHOA. High school is so much less stressful. Now... given that I am not the teacher of those high school students, just a sub, but doing my student teaching in elementary school I feel that I've got a touch in both now. I really enjoyed subbing. I totally find myself daydreaming about my husband and Jacob, but at least I know that I'm done at 3 and can head home to see my baby. I've also come to appreciate my husband so much more. He's been watching Jacob while I'm gone and it takes a lot of stress off my back. It has been nice to be able to go out, teach, and then come home to my happy baby that has been teasing his daddy all day long.
On Sunday, I tried this recipe that I found. It's called Lettuce Wraps. If any of you have EVER been to P.F. Changs... and have tried their lettuce wraps, you know how heavenly they are. I was so pumped to find the recipe, I tried it, added my own touch, and LOVED it. It is divine and very healthy. I'll try my best to remember the recipe.

*1 head of iceburg lettuce
*1 chicken breast diced in tiny pieces
*1/2 a sweet onion, diced
*1 small can of water chestnuts, chopped
*1 garlic clove, smashed and diced
*1 cup of bean sprouts, chopped
*1 red pepper, diced
*2 tbs honey
*3 tbs teriyaki sauce
*2 tbs rice wine vinegar
*1/2 tsp of cornstarch
*Hot mustard
*Chili oil

Cook the chicken and onion until chicken is no longer pink. Combine the red pepper, honey, teriyaki, and vinegar, wisk together for sauce. Add sauce to the chicken. Let it simmer for a couple of minutes and then add the chestnuts, garlic, and bean sprouts. Add the cornstarch IF your mixture is runny, I found that I didn't need to add this. Take apart the iceburg lettuce into leaves for wrapping.
Mix SMALL amounts of the hot mustard and the chili oil for a sauce to put onto the mixture inside of the lettuce. YUMMY!!!

Dang those wraps do sound good!! I've never heard of a lettuce wrap! Sounds worth trying for sure. Glad subbing is working out so well for you! That's exciting. I miss Jacob.. you need to mail him to me for a week!

I agree with Marinda. It was nice to have you blog about yourself, although bragging about our children is so much EASIER!!! Glad you've been able to sub and get out of the house, even if it is for work. I'm also glad that you're enjoying it!! I don't know if I would...

I'm so glad your subbing gig went well!! AND that you got to try subbing outside of your expertise--what an adventure! Yeah for you!

And I will definitely try your lettuce wraps. I love the ones at PF Chang's, so these will be yummy to try!

And, those lettuce wraps at PF Changs are so, SO delightful. So, I am going to have to make these little treats sometime.
